Mateusz Rosiak

At the head of our kitchen team stands Mateusz – who combines tradition and modernity, creating his own interpretations of Polish flavors in the spirit of conscious cuisine. He bases his dishes on fresh, seasonal ingredients, often sourced from regional suppliers or our hotel garden. It’s a cuisine where respect for nature meets culinary imagination.

In the 14th century, Topacz Castle belonged to the Wierzynka family – distinguished burghers from Kraków with roots in Lower Silesia. It was at Wierzynek’s in 1364, during the first European congress of monarchs, that the famous feast took place – an event that became a milestone in the history of Polish cuisine. Today, within the walls of Topacz Castle, we continue those traditions. The feasts of Old Polish cuisine have inspired us to create a modern menu – based on regional flavors, traditional recipes, and respect for nature. In our restaurant, we particularly value locality – we cooperate with nearby producers, use ingredients from our own crops, and compose dishes in tune with the rhythm of the changing seasons.

Besides excellent cuisine, we also have a pastry section in our kitchen. This is where our signature desserts are created, which you can enjoy at the Restaurant at the Castle. Our pastry chef Sylwia is a true artist in her craft — thanks to her, every sweet treat on our menu delights with taste and presentation.
